my mom would do the note thing too - not often but once in a while. she usually just wrote have a good day love mom on a napkin with a smiley face. she also liked to draw our names on our lunches in different ways (bubble letters, cursive, etc)

I do the note thing too with my own kids. Not every day however, more like once a week, but I always write the note on their napkin. Before the kids were readers I would just put a big smile face on the napkin. As they are getting older and their reading skills are improving I make the notes a little longer and sometimes include their weekly spelling words.

I also make a point to put "special" napkins in their lunches for Birthday's, Valentine's, Halloween etc. It's a fun thing and super cheap.

As for the actual lunches nothing super special here, just made from home lunches and I try my best to have all of the food groups represented somehow. Right now the kids love "homemade" trail mix. Which really is a little bit of everything I can find in the house. The small amounts of cereal left over that can't even serve one, pretzels, nuts, seeds, and for a special treat a couple of marshmallows or chocolate chips. Not too exciting, but they love it.
