Kristie,
I am ALWAYS offering him new foods. For the longest time he wouldn't try anything he didn't recognize, but I'm relentless and ALWAYS offer him bites of whatever I'm serving. He's getting better about it now. He does eat almost any fruit I serve him, but he won't touch a veggie with a 10 foot pole! I've discussed it with our pediatrician and he said just keep trying and doing what we're doing. As he gets older and we can verbally communicate with him and reason with him a little more, we'll get a little stricter about it. For now I just hide veggies where he can't see them! :-D

as i am often cooking for one too, (that college thing). I like to go get a package of chicken breasts from the store, and come home and trim them up and then stick them in the freezer in individual baggies. That way it only takes a few mins to dethaw (in the micro) or if i'm thinking ahead, i'll take it out in the morning and put it in the fridge with some marinade (usually italian dressing) in the bag and it'll be thawed by time i get home from class and am ready to eat. I then usually will just throw the chicken on the grill (med-hi) for 7 mins on a side. Perfectly done! [img]/forums/images/graemlins/laugh.gif[/img]

I also like to eat a lot of pastas, I've found a good alfredo sauce i like in a jar so i'll get that at the store and make fettaccine alfredo and pick up a fresh wedge of parmesan cheese and greate (sp?) my own while it's cooking cause it tastes so much better fresh - and that cheese doesn't go bad for a while!

I'm also not a fan of leftovers. I'll make rice or biscuts or something to go with dinner sometimes (or i'll just eat chicken). Pasta with just some olive oil or butter on it is pretty good too and easy.

It is difficult to change patterns like that when you only have the kids on the weekends. Especially if it isn't being reinforced the rest of the week. I had a stepson in my previous marriage and he ate HORRIBLY, but my ex didn't see a thing wrong with it. We had him about 3 or 4 afternoons a week and on the weekends. EVERY TIME my ex picked him up, he'd stop at McD's and get him a meal. Then he'd get him candy because he ate his "good food". Or, if he wanted candy and hadn't eaten anything yet, my ex would give him a jelly sandwich on white bread (no peanut butter) and then he would let him have candy because "well at least he's eating bread."

I shudder to think of the problems that kid will face as he gets older! SSSOOO glad I didn't have children with that man!!

When Nick is home we eat very well. He is an amazing cook (used to work at a restaurant when he was a kid) and always tries new (& delicious) recipes. His only complaint is that I'm lactose intolerant so he needs to replace milk with Lactaid!
When I am alone, I eat whatever I can find- usually cereal or something easy. I like to barbecue so I do that a lot too. I consider myself more of a baker than a cook! Nick and I also try to go out for sushi when he's here since we live near the best sushi place in town.
