Carrot Souffle

My best friend says I should serve it as a dessert. A holiday dish because it takes a little time to make and I have to take the extra step of getting out the food processor. Can be a little tricky finding the perfect cook time. Despite it's difficulties everyone loves it and asks for it when they come to my house.
| | Ingredients: | - 1 & 1/2 lbs peeled carrots
- 1 & 1/2 sticks of butter
- 3 eggs beaten
- 1/4 cup flour
- 1 & 1/2 cup sugar
- 1/4 teaspoon cinnomon
| | Preparation: | - Peel carrots. Cut into finger size pieces. Cook carrots 15 mins in boiling water.
| | Instructions: | - Combine all ingredients, including cooked carrots in food processor. Texture should be rather liquid, but with some small carrot pieces.
- Pour mixture into ungreased 2 qt glass bakeware.
- Cook 45 mins to 1 hour at 350 (an hour is perfect in my oven but my mom says 45 mins is all it takes in her's.) Texture should be fluffy, no liquid in center. Beware of too much browning of sides.
