    Default Buffalo Style Chicken Wings

Okay ladies, being from the Buffalo area of NY (well an hour or so away), I LOVE realy Buffalo Style Wings. I could go buy some at a place here but to save $ I'm going to try to make them. Any suggestions? I've looked on line and got the basics. How do you make the hot sauce not taste too vinagery but still spicy? What do you cut it with?

Jackie, I soooo hear ya! I've actualy ordered the sauce from the Anchor bar in BUF, I'm from Rochester, and I know my wings! lol

I've tried making them and sadly the only thing I could come up with before ordering was the sauce from BW3's and Franks wing sauce sold at the grocery. Still, not the flavor I crave, but will do. Gotta have the celery, carrots, and blue cheese!

I'll have to ask my husband what he does exactly, but I know he uses Frank's and let's them marinate in it for a while. I think he might add something to it though. They are awesome! He makes some really good bbq ones too!
Now, we're not from Buffalo but compared to BW3's and Wings n More, I'd take my husband's first.
And he bakes his, they aren't fried.

As usual, the American Test Kitchen Cookbook saves the day! Lord I love that book!
    1 stick butter
1/2 cup Franks Louisiana Hot Sauce
    2 Tblsp Tabasco
    2 Teaspoons Brown Sugar
    Cayenne Pepper to taste.

We also added some garlic to make it taste a little more "rich". I gotta say, they were pretty darn close to Cam's or Uncle Joe's Pizza in NY. SO GOOD!

I have a great wings recipe--not Buffalo, however. If someone wants me to post it, let me know!

Before you fry them, put some flour and whatever other spices you may like (if any) in a paper bag. Put the wings in the bag and shake it up. Then fry them as usual. To put the sauce on, you can just put the wings in the pot with the sauce, put a lid on it and shake it around.

I recently had dry rub wings that were even better than regular wings!
