Default Crepes!

Kristie, this one is for you since I know you guys can't go to Paris as much anymore -

Here's an easy crepe recipe that I found in Jane magazine - Tried it this morning and it's really good!

1cup Milk (preferably whole)
3 tbs water
3/4 c flour
2 eggs
1tsp salt
1tbs melted butter

For sweet crepes, add:
2tbs sugar
1/2 tsp vanilla extract

In a large bowl, gradually whisk the milk and water into the flour. Whisk in eggs and then the remaining ingredients. Heat a pan over a medium-high and coat with butter. Add 1/3 cup of the batter and angle the pan to form an even layer of batter. Cook until slightly brown, about two minutes, then flip and cook a minute longer. Stuff, fold in half then fold again to make into triangular pockets.

the first one i put strawberry preserves in it (A+) and the second time I did cinamon sugar (C-)

as far as flipping it, I used the spatula to loosen around the sides and then stuck it in as far as I could go and flipped it like a pancake!

yeh, thought about that after the fact, but no nutella in the parent's house - perhaps just plain peanutbutter next time...

Don't you just jerk the pan forward and flip it? That's what I do!
