| Well it's from a failed vacation trip... It's quiche tonight. Charlie went diving off a NJ wreck on Monday. He knew I was bummed about losing my vacation (Kristie and I must work for the same employer--LOL). So he called me in the PM and told me that he was on his way home after a great dive and not to worry about dinner. He had scored three lobsters! Apparently it is likely that you will encounter them but he didn't want to disappoint me if he didn't. So we ate two on Monday and tonight is the third! YUM! |

| Hope your lobster was good Roz. I'll be having some on Friday night or Saturday since my in-laws live a stones throw from the Lobster Pound (a frsh seafood fish store) in Plymouth,MA. Yummy! Sorry to hear about your cancelled vacation. Jan |

| We had our annual lose em fest at work. My boss got nuts and said I could not go on vacation. We had planned it around Charlie's friend's wedding in Cape Cod on 6/4--we were to go to the wedding and then off to the islands. My boss only let me go to the wedding. I am SO ticked! I used a whole wheat pie crust (cause I don't eat white flour). Oven to 400 degrees. Prick the pie crust and place it on a baking jelly roll pan. Beat 2 eggs with 1 C light cream. Add salt and pepper and 2 Tbs. tomato paste or chopped fresh tomatoes. Saute 2 Tbs diced scallions or shallots in olive oil about 2 minutes--do not brown. Add S & P. Add shellfish for one minute. Add 2 Tbs. Madiera and cook for 1 minute more. Add fish mixture to bottom of shell. Add egg mixture. Top with 1/4 C grated Swiss chees. Top with paprika. Bake 35 minutes or until puffed and brown. Serve with a salad and it is so easy! |

| Our fiscal year is July 1 to June 30 and it's use it or lose it. We had our annual spring bout of resignations. But, in a cost cutting move last December, corporate laid off a recruiter and didn't realize they had an annual spring bout of resignations until it was upon us (in other words, my turnover trend analysis was ignored). So he took it out on me for not working hard enough to overcome that. He accused me of sitting around twiddling my thumbs. Let's see, I had a major wage and hour investigation that I won, had to spearhead the initiative to have all staff comply with the new fingerprinting and child abuse clearance checks, design and develop leadership and compliance training, roll out the drug free workplace policy to all staff, continue to lead the HR piece of the JCAHO accreditation process,.... It's the old wagon train mentality of senior management at the company--when something is wrong, get tough and yell a lot. I told him that may have worked on the wagon train, but if he was going to continue to recruit professionals from outside of the company, he was going to have to learn to treat them as professionals. A jelly roll pan is a cookie sheet with the half inch sides so that if something spills over it stays in the pan and doesn't spill out into the oven! A cookie sheet technically has no sides--it's just a flat sheet of metal. |

| Your recipe sounds great Roz. The Lobster Pound actually pulls their traps out on the beach in front of my in-laws condo, so I would say it's about the closest thing to catching them yourself! I'm looking forward to the weekend! I hope the boss man wises up! |

| It is just a very small little building right on the water where you can buy fresh seafood in Manomet, MA (near Plymouth). They supply alot of the restaurants in the area. There are tons of lobster traps they pull up onto the beach. I'm actually not sure if they belong to that store or not. My in laws always buy the lobster meat. It's awesome and no shells! |
