| Admin/Owner ![]() | Along with my recipes, please feel free to post your own, giving us all some ideas to work with for V-Day. Technically, Doug and I don't celebrate V-day since everyday we're together is Valentines Day to us. But every now and then, we go all out and create an actual "K&D Day Spectacular" where we cook up a storm and enjoy the fruits of our labor. here's a few of those recipes: ____________________________________ Breakfast: <u>Breakfast Casserole:Full English Breakfast - American Style</u> lightly toasted and cubed bread, enough to generously cover the base of a 9 x 13 pan 1 lb bacon, chopped and cooked until crispy 1/2 lb crumbled, cooked sausage, drain well 1 large onions, chopped and sauteed 8 ounces fresh mushrooms, chopped and sauteed 2-3 large tomatoes, chopped,uncooked 8-10 eggs, beaten with the following 4 cups milk 1 tablespoon Dijon mustard (or 2 tsp. dry mustard powder) freshly ground black pepper 1 teaspoon dried mixed herbs (optional) 8-10 servings 1 large pan Change size or US/metric Change to: large pan US Metric 1 hour 15 minutes 30 mins prep Preparation: Layer all ingredients evenly over the bread, pour the egg mixture over all, refrigerate overnight,just before baking at 350, top with a good sharp cheddar cheese (grated) until golden brown and slightly risen, approx 45 mins. _____________________________________ Lunch/Dinner/Dessert: <u>Shrimp Cocktail with homemade cocktail sauce</u> 8 Jumbo Shrimps (cooked or uncooked - however you want to make them) 2 large martini glasses Sauce: 1 c. ketchup 1 tsp. prepared horseradish Dash of cayenne pepper 2 tsp. lemon juice 1 clove garlic, minced 1/2 tsp. chili powder Preparation: Combine all ingredients. Refrigerate until served. <u>Bacon Wrapped Filet Mignon</u> 2 tbsp. butter 1 tsp. parsley flakes 1 tsp. instant minced onion 4 beef tenderloins, 1" to 1 1/2" thick 4 slices bacon Preparation: Preheat broiler. Melt butter and add parsley and onion. Wrap bacon slice around fillets. (Use more bacon if desired.) Place meat on broiler pan 3" to 4" from heat. Broil 5 to 7 minutes each side for rare. Broil 8 to 10 minutes each side for medium. Brush with butter mixture occasionally during cooking. <u>Chocolate Covered Strawberries</u> 1 bottle of veuve Clicquot Champagne (really tastes good with strawberries!) 6 ounces semisweet chocolate 2 T. unsalted butter 1 pint fresh strawberries - washed and dried - DO NOT Remove the Hulls! Preparation - Line a baking sheet with wax paper. Place the chocolate in the bottom of a 1 quart microwave safe bowl. Place the butter in the center of the chocolate. Cook on 50% power for 2 minutes. Stir, then cook on 50% power for an addition 30 seconds or slightly longer, until the chocolate is melted, stirring frequently. To coat... One by one, holding a berry by the hull, partially dip it into and swirl in the melted chocolate mixture. Place the coated berries, hull side down on the wax paper lined baking sheet. Refrigerate for about 30 minutes to harden the coating. Enjoy! [img]images/graemlins/874.gif[/img] |
