| Hey guys! This soup is so easy and yummy! A friend of mine stopped by today for a last minute play date for the kids and I whipped this up in about 5 minutes! 1 cup water 2 cans (14.5 oz) chunky tomatoes with olive oil, garlic & spices (I used diced tomatoes with garlic, oregano & basil) 1 can (11.5 oz) tomato juice 4 slices roemary, Italian or French bread, 1/2 in. thick 2 tbsp. pesto 2 tbsp. parmesean cheese Heat water, tomatoes and juice to boiling in 3-quart saucepan. Set oven to broil. Place bread on cookie sheet. Spread with pesto; sprinkle with cheese. Broil 4-6 inches from heat until edges of bread are golden brown. Ladle soup into 4 bowls, top each serving with a bread slice Per serving: Calories 190, Fat 7 g, Cholesterol 5 mg, Sodium 1070 mg, Carbohydrate 29 g, Protein 6 g. To turn this into pizza soup, stir in 1 pound of browned Italian sausage and 1 can (2.5 oz) sliced mushrooms-drained-in step 1. Enjoy! |
