| Admin/Owner ![]() | We had this recipe at thanksgiving and it was the best thing on the table - no joke! Orange-Ginger Sweet Potatoes From: Nathalie Dupree Cookbook 3 LB Sweet Potatoes 6 Tbs Butter - Room Temperature 6 Tbs Dark Brown Sugar 1/2 tsp Salt 1/2 tsp Ground Coriander 1/2 tsp Cinnamon 1 tsp Fresh Ginger 1 tsp Lemon Peel 1/4 Cup Orange Juice Preheat oven to 350 degrees. Spray with non-stick (Pam) 1-quart pan (Casserole Dish) Line baking sheet with foil; wash & dry sweet potatoes and stick them several times with a knife. Bake about 2 hours until soft. Peel potatoes once cool. Beat them with a mixer until mashed. Beat in 4 Tbs butter. Add 4 Tbs brown sugar. Add salt, coriander, cinnamon, ginger & lemon peel. Mix well. Beat in orange juice. Place potatoes in prepared 1-Qt baking dish. Sprinkle with remaining brown sugar and dot with remaining 2 Tbs butter. Bake 30 min. |
