That's a good question.
Did you have something specific in mind to substitute for the oats?
I was wondering if you could use coconut. But I've not tried it.

I didn't have anything in mind, I just can't have oats. Thanks for the idea, I think coconut might work great. I'll try it and let ya know!

I have actually seen this recipe (or a variation of) made with chow mein noodles (those hard crunchy brown noodles) and one cookie was made with corn flakes.

me too...we called the ones with chow mein noodles, Hay Stacks...and cornflakes, I'll have to try that one...

Now I'm going to have to try all three different variations: coconut, crunchy brown noodles, and corn flakes. Thanks for the great ideas! They sound delicious!

Made some today! Yum!
But I have a 2 questions:
1. Do you cool them/store them in the fridge?
2. How did you serve them? They are kind of sticking to the wax paper/ too gooey to be just picked up. I am having a little get together next week and wanted to know how you guys served them?

I store mine in an airtight container (and place it in the microwave) overnight.
But, you could store them in the fridge to help them firm up.

My DH helped me make some for 4th of July and he didn't remove the pan from the burner when he was adding the oats and peanut butter and they were chewy. So I made another batch and they were just fine.
