Default Cooking Corn...

Another recipe from JC

--------------------------------------------------------------------------------

On the corn, just throw this thing in boiling water?

--------------------------------------------------------------------------------

Nooooooo!!!

Slowly step away from the big pot of boiling water and put the corn back on the counter.

*sigh* I'm too late.

Alright well next time, do this with the corn:

Peel back the husks, but don't remove them. Take off the silk and check for any bad spots etc.

Now, wrap the husks back around the corn and soak it in cold water for a few minues (like 2 or 3).

Now place it on the grill, although not the hottest spot.

What you have now is corn that will be steaming in its own juices. Also should get a nice smokey flavor since some of the husk will burn a bit, but make sure it doesn't get torched.

Another way to do the corn is to shuck it, brush will a little olive oil and salt (kosher is a good choice corse sea salt is a good choice also, but crush it up a bit) and roast it right on the grill.

Memorize the following: "Everything can be cooked on the grill" or if you're camping: "Everything can be cooked in a dutch oven".

I have a friend that boils it in milk and sugar! :? Not sure if that's one I want to try or not. We don't grill ours because it's farm sweet corn and I just think it's better not grilled.

Corn is actually very creamy inside (think: creamed corn in the can) and boiling it in milk and sugar actually helps to bring out the natural creaminess as well as the natural sweetness.

We personally do ours on the grill, but my dad has made it with milk and sugar before. I, on the other hand am too cheap to use my milk that way....that stuff is too expensive!!!

Another good thing to do with an ear of corn (once its cooked) is to put it in a plastic bag with a squeeze of fresh lime juice and dash of chili powder. Close the bag and shake like crazy!

YUMYUMYUM!!!!!

Well I no longer eat corn. But if I did, I'd boil it for two minutes--no more (unless you just harvested it--then I'd eat it raw). Then if I absolutely had to have something on it (which really you don't because corn is perfect by itself), I'd mix up some olive oil and Aleppo pepper or some other type of pepper.

To my taste, grilling overcooks the corn. I like to taste it (or I did).

Because I'm 51 and people tell me I don't look like I'm 40. I'd like to keep it that way. So I don't eat foods with a lot of sugar in them. I only eat whole grains, brown rice, lean proteins, etc.

If you're 51 and people tell you that you DON'T look 40 - what age to they tell you you look like?

Just kiddin' I know it was a typo
