I am currently mastering flour tortillas (store ones are high fat/sodium) and we're trying more meatless meals. Chilis fit the bill to spice up beans and more.<br />

I feel like she's making lightly of something that could be a big problem. I was a chunky kid and have struggled big time with my weight my whole life and I really don't want my kids to. I think if they were that overweight, I wouldn't be making cute and light about it. My biggest problem is that once I have figured out a main course, I can't think of any good side dishes to go with the main dish. What are your favorite meals, and the recipes to go with them?<br />

One of my favorites-- Pulled pork sandwiches with sweet potato fries.<br />

Pulled pork sandwiches- <br />
 <br />
3 pounds pork shoulder or pork butt<br />
chicken or beef broth (1-2 cups)<br />
coke (2-3 cans)<br />
 <br />
Put the pork shoulder in a crock pot. Cover with broth and coke. Cook on low for up to 10 hours. When pork falls off the bone, remove from crock pot, shred with two forks, and mix in your favorite bbq sauce. Serve on soft buns, with sweet potato fries (I use frozen).<br />
 <br />
This is one of my (and my family's) favorite dinners- great for busy fall evenings!</div>
