Absolutely! I agree, if you're flying regional only and layovers are infrequent.
My DH flies overseas and his layovers average 24 hrs to 2 days. As he is regularly in Frankfurt, Paris, London or Beijing he is able to explore not only the 'touristy' locations but likes to find out where the locals go. Being that pilots are notoriously 'cheap' - my DH especially when he's away - by staying away from the big money restaurants he's come across some amazing place to eat, for example. They're always giving heads up as to what to do/see/eat, etc. from other pilots.
I don't think that pilots are special/different per say, but I'm betting that the average traveller won't stray from the big tourist areas. When they fly frequently to particular places they become very familiar with them - a second home, if you will - and when you do that it's inevitable that you're going to see some interesting stuff.
Different cultures bring different values - it's all out there.
