Our Diver Scallop Party! DH went diving and scored more than 50 sea scallops. So, we had a party!
On top of a full range of appetizers (all with whole grains and good for you), I served a warm spinach salad with roasted corn and crispy pancetta dressing and crumbled goat cheese. For the main course, we served butter/olive oil pan seared fresh caught and shucked scallops with a Corn Relish. Add a few bottles of nice wine and we had fun!!!!!!!!
I'm not into dessert--but no one else is who eats at my house either!
