Put chunks of lobster (you can make them any size you like) in a small casserole dish (I use an 8 x 8 glass pyrex dish for about a pound or a little less). Squeeze some lemon on the lobster. Spoon melted butter over it. (I use whipped butter, almost the entire 8 0z container). Sprinkle crushed ritz crackers over then put some more butter over the crackers. You can mix the crackers with the butter if you want, I've done it both ways and it pretty much comes out the same. Then do the whole thing over again. I usually do about 3 layers. Then I just sprinkle with a little parsley and back for about 10-15 minutes at 325. You don't want to cook it too long because the lobster is already cooked and will get rubbery if its cooked too much. You really just want to heat it up. You can put in as much or as little of the cracker crumbs as you like. Just depends on personal preference. The more crumbs you use the more butter you need so it isn't too dry. It's very yummy and a nice treat once in a while. I couldn't eat it every week that's for sure! |
