I store mine in an airtight container (and place it in the microwave) overnight.
But, you could store them in the fridge to help them firm up.

My DH helped me make some for 4th of July and he didn't remove the pan from the burner when he was adding the oats and peanut butter and they were chewy. So I made another batch and they were just fine.
