Default Need help w/ packing lunches

Dh is getting so tired of what I cook lol. I'm not a great cook, and I make things that are very simple and boring, because he's usually working for 12-16 hour shifts so I have to fit 2-3 meals plus snacks in a little cooler pack thing. And I just don't have the time and energy for elaborate meals. So I just need some fresh ideas. Sigh, why can't fast, easy, healthy, cheap AND good ever come all together in food? LOL

Usually for breakfast I make some scrambled eggs w/ cheese and peppers.

Snacks are usually yogurt, grapes, string cheese, cottage cheese, an apple, celery sticks.

Lunch or dinner is usually chicken enchiladas, ham & cheese, grilled cheese and soup, spaghetti, or a frozen meal.

And every day he gets a veggie salad.

So some fresh ideas would be awesome!
