August 2004 - Jessica\'s Bean Soup I liked Kristie's Recipe Club idea. So...I thought I'd post a recipe.
I'm actually making this soup right now, so I thought while I had the recipe out...why not?
Like Roz mentioned in another post...I don't usually cook from recipes, but when I find something I like, I write down what I did so I can make it again.....I actually got this recipe, though from DH's Grandma. Enjoy!
BTW...I don't measure anything, so most measurements are approx.
Spicy Bean Soup:
1 bag dried beans (I use the 15 bean mix)
2 1/2 quarts water
2 smoked ham hocks
1 cup chopped onion
15 oz tomato sauce (diced tomatoes work also)
1 - 3 Tblsp. Chili Powder (depending on how spicy you like)
Wash and soak beans 8 hours or overnight. Rinse and drain beans. Place beans in large stock pot and cover with water. Add ham hocks and bring to a boil. Reduce heat and simmer 3 hours.
Remove ham hocks to plate to cool. Add onion, tomato sauce and chili powder. Remove meat from ham hocks and add to soup.
Allow to simmer 2 - 3 more hours.
Its good the first night if its allowed to simmer all day...but its better if its been in the fridge or freezer and reheated. I usually serve it with cornbread and a salad. Its GREAT on cold winter nights!
