Re: BBQ Get one of those grill pans and you can grill veggies--marinate them first in some lemon juice/olive oil mixed with chopped fresh garlic, salt, pepper and any herbs you like. Pour the remaining marinade on them after you've grilled them. Back when I ate potatoes I also grilled them. If they were new potatoes, I'd cut them in half. If they were larger, I'd quarter them. Then I'd boil them a bit to cook them. Drain and marinate--then grill.
You can grill anything really--meats can either have a marinade or dry rub. Grilling shrimp on a wooden skewer is also really easy. Don't marinate them longer than 15 minutes because the acid in the marinade cooks them.
You can also grill fruit. Peaches brushed with balsamic vinegar are really good. (You halve and pit them!). Pineapple also grills well.
You can also grill individual pizzas, quesadillas, etc.
If I'm making kabobs, I make separate ones for the meat than for the veggies. The reason is that the meat cooks at a different rate than the veggies. So if you put the veggies on the same kabob as the meat, you are likely to burn the veggies or have them get so soft that they fall off. |
